It is still hard and crisp when ripe, which makes it a great choice for fresh eating, sliced in fruit salads, dries well and can be frozen. The nonastringent Fuyu sought after for its extremely sweet flavor and minimal seeds. Persimmons offer an excellent source of fiber and contain lots of vitamin A and are a source for vitamin C.
